Fruit and vegetables could be stored in freezers for up to a year before appearing as 鈥渇resh鈥 produce on supermarket shelves, says Salvesen Logistics of Northampton (GB 2367998). Salvesen says that its new process, which it calls Tendafrost, does not affect flavour in the way that blanching in hot water before deep-freezing does. The vegetables are simply washed and frozen within a few hours of harvesting and then stored for up to 12 months. When needed, they are slowly thawed in containers that are flushed with nitrogen to remove oxygen and delay decay. The food is then delivered unfrozen to the supermarket.
